Vegan Lentil Meatloaf
Ingredients:
- For the Meatloaf:
- 1 cup dry lentils (green or brown), rinsed
- 3 cups vegetable broth or water
- 1 cup cooked quinoa or brown rice
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 carrot, grated
- 1 bell pepper, finely chopped
- 1 tablespoon soy sauce or tamari
- 1 tablespoon ground flaxseed mixed with 3 tablespoons water (flax egg)
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- ½ teaspoon cumin
- Salt and pepper, to taste
- 1 cup rolled oats or breadcrumbs
- ½ cup walnuts or pecans, finely chopped (optional)
- For the Glaze (optional):
- ¼ cup ketchup
- 1 tablespoon maple syrup
- 1 tablespoon apple cider vinegar
Instructions:
- Cook Lentils: In a pot, combine the lentils and vegetable broth (or water) and bring to a boil. Reduce heat and simmer for about 20-25 minutes, or until the lentils are tender and most of the liquid is absorbed. Drain any excess liquid and set aside.
- Sauté Vegetables: In a skillet, heat a splash of water or oil over medium heat. Add the chopped onion, garlic, carrot, and bell pepper. Sauté until the vegetables are softened, about 5-7 minutes.
- Combine Ingredients: In a large mixing bowl, combine the cooked lentils, sautéed vegetables, cooked quinoa or rice, soy sauce, flax egg mixture, thyme, smoked paprika, chili powder, cumin, oats or breadcrumbs, and chopped nuts (if using). Mix well until all ingredients are combined. Season with salt and pepper to taste.
- Shape the Meatloaf: Preheat your oven to 180°C (350°F). Transfer the mixture to a loaf pan lined with parchment paper or greased lightly. Press it down firmly and smooth the top.
- Prepare Glaze (optional): In a small bowl, mix together the ketchup, maple syrup, and apple cider vinegar. Brush this glaze over the top of the meatloaf for added flavor.
- Bake: Bake in the preheated oven for 45-50 minutes, or until the top is firm and slightly browned. Let it cool for about 10 minutes before slicing.
- Serve: Slice the lentil meatloaf and serve with your favorite sides, such as mashed potatoes or a fresh salad.
This Vegan Lentil Meatloaf is nutritious, satisfying, and packed with flavor. Perfect for a family dinner or meal prep!
